A delicious, easy breakfast, vegan, gluten and refined sugar free!

Rustic Banana and Cinnamon Hot-Cakes

serves 2

-1 tbsp coconut oil
-2 bananas, sliced
-1 tsp cinnamon
-2 tbsp coconut flour
-2 tbsp coconut milk
-1 tbsp chia seeds soaked in 2 tbsp water
-2 tsp cinnamon
-1 tsp baking powder
-1 tbsp raw almond butter

Serve with

-Fresh passionfruit
-Fresh blueberries
-Pecan nuts

-Heat the coconut oil in a non-stick pan
-Mix bananas and 1 tsp cinnamon together and cook until warmed through
-Mash bananas and add remainder of ingredients to form a smooth paste
-Lightly oil the pan and spoon the mixture into circles
-Cook on each side for 2-3 minutes
-Serve with fruit and nuts
